365-Day Project: Day 9 - Made Puerto Rican Style "Sofrito"

Sofrito is a delicious seasoning mix that provides an amazing flavor to beans, stews, soups, meats, and rice (such as rice and pigeon peas), which is another traditional Puerto Rican dish.




My sofrito recipe consists of sweet green peppers, red and yellow bell peppers, fresh garlic, cilantro, culantro, yellow onion, olive oil and salt.


Below is the list and portions for a decent amount of sofrito that may last you a good 2 to 3 months if used 3 to 4 (about 3 to 4 spoonfuls per meal) times a week.


Ingredients List: 6 small sweet peppers, 1 red bell pepper (use half), 1 yellow bell pepper (use half), 1 pound of fresh garlic, 1 yellow onion (use half), a teaspoon of olive oil and a teaspoon of salt. You will blend all these items in the blender. Once fully blended, pour into small containers. Place one container in refrigerator, this is the one you will use first, the remaining containers place in freezer until you need to use them one at a time.
